  1. Make steak: Heat 1 Tbsp olive oil in cast-iron skillet over medium-high heat. Combine 2 Tbsp freshly grated lemon zest, 1 Tbsp chopped fresh oregano, and 1/2 tsp each kosher salt and black pepper in small bowl. Rub over 1 lb skirt steak, cut into 4 pieces, to coat.
  2. Add to hot skillet and cook to medium-rare, 4 to 8 minutes per side.
  3. Make salad: Prepare 1/2 bag (10 oz) frozen brown rice (we like 365 Everyday Value Organic Brown Rice from Whole Foods) per package directions. Combine with 4 oz halved cherry tomatoes, 1/4 cup pitted olives, 1/2 sm diced shallot (about 3 Tbsp), 2 Tbsp fresh lemon juice, 2 Tbsp extra virgin olive oil, 2 Tbsp chopped fresh oregano, 1 minced clove garlic, and 1/2 tsp each kosher salt and black pepper.
  4. Slice steak and serve with salad.
